Gilbert lehrte als Philosophieprofessorin an der Duke University und leitete das Department für Ästhetik, Kunst und Musik bis zu ihrer Emeritierung 1951. Sie war die erste ordentliche Professorin an der Duke University. In Gilberts Arbeiten geht es um die Erkenntnis des Ästhetischen und des eigentlich Künstlerischen. Doch wird bei Gilbert diese Grunderkenntnis in ein Gedankensystem integriert, das auch andere Bereiche der Philosophie umfasst. Der Kunst wird darin ein bestimmter Platz zugewiesen. In allen Schriften Gilberts werden Argumente für die These vorgelegt, dass das künstlerische Tun einem Erkenntnisproblem gleichgesetzt werden kann.
